Lentils with smoked fish
Ingredients
250g small lentils (eg. le puy green lentils or beluga lentils)
2 bunches of spring onions, chopped into rings
2 Tablespoons soy sauce
1 Tablespoon sherry vinegar
350 g smoked buckling or herring, chopped in large pieces
1 bunch parsley, roughly chopped
 
Preparation
1) Cook 250g small lentils (eg. le puy green lentils or beluga lentils) in salt water until al dente. Drain and set in a bowl.
2) in another bowl, mix spring onions, chopped into rings, soy sauce and sherry vinegar
3) add all other ingredients to the bowl, mix well, and store in the refrigerator for 2 hours to cool
4) season with salt and pepper as desired
